JUJUBE

The jujube (also known as red date or Chinese date), is a fruit native to Central Asia. It has been cultivated in China for more than 4000 years. This small fruit grows on the jujube tree and is about 15 to 30 mm long. The jujube tree is very hardy, this tree which can grow up to 12 meters long can survive temperatures down to -15°C. When the jujube is ripe, it withers and its taste is similar to that of dates.

Choose jujubes that are firm, smooth, and evenly colored, whether they are fresh (green to reddish-brown) or dried (dark reddish-brown and wrinkled).
For fresh jujubes, a crisp texture and apple-like skin indicate good quality. Avoid fruits that are too soft, shriveled, or have dark spots or mold, as these are signs of overripeness or spoilage.

Fresh jujubes should be stored in the refrigerator to maintain their crisp texture and freshness, ideally in a breathable bag or container to prevent moisture buildup. Consume them within 2 to 4 weeks. 


NUTRITIONAL VALUE

The jujube is an antioxidant and a good source of vitamin C. However, the fruit is much richer in vitamin when it is wilted.

HOW TO EAT IT

The flesh of the jujube is gelatinous and slightly sweet. It can be eaten raw, dried or in juices. You can also crush the flesh and use it in cakes, pastries and even make rum!
